I think I may have a solution for those who can't get the memedit.xex to work.
1. Make sure your Launch .ini is formatted as follows:
[QuickLaunchButtons]
BUT_X = Hdd:\Content\0000000000000000\C0DE9999\00080000\C0DE99990F586558
Default = Hdd:\Freestyle\Freestyle\default.xex
[Plugins]
plugin1 = Hdd:\memedit.xex
[Settings]
nxemini = true
pingpatch = true
*Note I keep my memedit.xex in the root of my HDD.
2. Move your launch.ini file into the root of your HDD alongside the memedit.xex (or in the same folder that you have decided to keep the memedit.xex) If the launch.ini is in another folder the plugin doesn't seem to function properly.
3. Launch the default.xex for dashlaunch and load the new launch.ini.
4. Now go into Xbox 360 neighborhood and type in your JTAG's ip. It should now find it and you are able to poke your edits in real time as usual.
Notes: I am using Kernel 12611 with Dashlaunch 2.2. I don't know if it needs to be said but ensure that after you have updated dashlaunch that you reboot your console >_<
