Thinking from switching from my S5 to the iPhone 6.

If I jailbreak the iphone 6, (I know it voids the warranty), and an update releases, do I have to install the update?

Thanks

You don't have to install an update, you do get a choice to but the latest iOS can not be jailbroken, yet.

If I download the iOS version that can be jailbroken, can I manually install it to an iPhone 6 then jailbreak it?

No, if the phone is on 8.1.3 or higher then you can't jailbreak unless a exploit is found, downgraded are not possible, the last device that could be downgraded was the iPhone 4

Only if you had the SHSH Blops saved, which isn't very possible at the moment. If you were to get a iPhone 6 now, it'd probably come on iOS 8.2 or 8.3 which are not able to be Jailbroken. You'll just have to wait for it to release.
