Depends on your firmware I still have the old firmware 2.2.1 and it's a 2g ipod touch. So for me the best thing to use would be redsn0w. If you have 3.1.2 which is for the new ipods and is the new firmware update then you would use blackrain. Many videos on youtube explaining very easily. you can update from 2.2.1 to 3.1.2 for free. iPod and iPhone Firmware Download then shift click [restore] click on the file you just downloaded and then you can use blackra1n. (i did this yesterday)
It all depends my friend irl who does stuff like this with me told me that blackrain is much much safer. In my opinion there is no safer all you are doing is opening the idevices data your not downloading something that could have a virus. They all seem to work just as good not much of difference just jailbreak on the firmware you know you will stay on for a while.
