Hardware Controller mod-Possibilities?

Hello,
I am, by most estimates, disabled. As a result, I cannot work both a nunchuck and a Wiimote, or any other twin-thumb input scheme.
I was wondering at the possibility of replacing a nunchuck with a DDR pad, so I could control character movement with my feet, and look/attack with the wiimote.
I'm somewhat handy electronically, can read schematics fairly well, but have no real concept for the inner workings of either of these devices.
Figured this world be as good a place as any to ask.

There are alot of people who have mad one handed mods for wii remotes and im guessing there are a few that are close to what you where thinking
