Hmm, only mods I'm aware of and I'm able to do is put custom texture packs, skin packs on the game but offline only. And I don't think changing health and game mode on other players games via tool is possible atm.
Ill update this post if I find any.

Hex editing is a option for unlimited health on your worlds, we probably need to wait before its possible on other servers, I may be wrong and this could be possible without my awareness.
