Make X equal your desired character level.
player.setav speedmult X
Where X equals your movement speed in a percentage value. (100 = 100%)
player.setav skill X
Sets skill without messing with level gains. The skill name can be found from the skill list, and X equals the value you want that skill to be. This also works for health, stamina, magicka, and carryweight. Example: player.setav marksman 50 (sets your archery to 50.)
player.modav skill X
Buffs or debuffs a skill. The skill name can be found from the skill list, and X equals the value you want that skill to be. Example: If your Block skill is 30, you can "player.modav block 10", activating a buff to your Block and setting it to 40 (with the skill level appearing green as if a spell or item is affecting the skill). The same can be done in reversing by using a negative integer. Using "player.modav block -10" would activate a permanent debuff to your Block and set it to 10 (with the skill level appearing in red).
player.forceav ShoutRecoveryMult X
Reduces Shout cooldown time to 0 is "X" is set to "0".
set DecapitationChance to X
Chance to decapitate (eg two-handed perk etc)
set DecapitationChance to 60

animcam; enables a 3rd person swivel cam.
TM: toggle menus. (ie. crosshair, compus)
tfow: toggle fog of war

also, the command coc can be used to teleport your actor to any location, change of cell.

If you guys need things like item ID's for the item giving commands, check out http://www.uesp.net/wiki/Skyrim:Items

They have lists of all the items in the game, along with the ID's for each item.

And if you end up with quest items stuck in your inventory after a quest has been finished, check the respective "Skyrim:QuestName" article on UESP, and there *should* be notes for how to get rid of specific quest items along with a command on the article. I'd probably wait a month or two, when the Skyrim section of UESP has really expanded, as it's quite new at the moment.
